Quinoa Meatloaf

1 pound lean ground turkey or chicken
1 cup of cooked quinoa
1 egg
¾ cup of plain low fat yogurt – Fage
½ cup each of chopped onion, celery, red, green or yellow bell pepper
1 tbsp of low sodium soy sauce or tamari
1 tsp each of salt, dried oregano and dried basil

1. Preheat oven to 350
2. In a large bowl combine all ingredients, pour into loaf pan and bake for about an hour. Let stand for 10 minutes before cutting.
